This is by far the very best shortcrust recipe I have ever made or ever seen. My shortcrust has been either too soft so that I cannot roll and then when I finally get it into the tarts tins it comes out too tough. I did exactly as you said Gemma and my mince pies were so delicious. I used a really lovely bought mince, but the star was the shortcrust. From now on I am going to use this recipe for all my other tarts. Thank you so very much from Australia, and Merry Christmas to you and yours.
